How to Cook Oatmeal
- Raw oats have a natural bitterness from their enzyme activity and MUST BE COOKED to eliminate the bitterness.
- Best way to cook for oatmeal is to simmer in water for 5 min. @ 1:2 ratio (1 svg=1/2c oats + 1c water) with a bit of salt.
- Firmer oats: decrease water.
- Creamier oats: incr. water & cooking time.
- Delicious in baking, which eliminates bitterness.
- Toasting raw oats dry can increase bitter notes.
Protein Balls & Overnight Oatmeal & Baby Food
- Many people use raw oats in no-bake protein balls because other ingredients cover the bitter notes. Most use seed or nut butter and chocolate and/or cinnamon.
- For convenient overnight oats, you will need to pour boiling water over raw oats before refrigerating to eliminate the bitterness.
