Description

Potato pancakes are gluten free and made with Whole30 compliant ingredients. They are best served with apple sauce and sour cream.

Ingredients

  • 500g Parboiled Potatoes
  • 1/4 cup White Onion – finely chopped
  • 1/4 tsp Salt
  • 1 tbsp Potato Starch
  • 1 Egg
  • 1 tbsp Ghee
  • 1 tsp Olive oil

Note

  • Instead of ghee and olive oil, you can use 1 tbsp & 1 tsp of a light vegetable

  • Pan

Instructions

  1. Parboil the potatoes – cook times varies by size of potatoes. The potatoes should be soft enough to pierce with a fork easily, but not soft that they can be mashed.
  2. If the potatoes were boiled with skins, peel the potatoes.
  3. Grate the parboiled potatoes on the larger grating setting.
  4. Mix in onions, salt, potato starch, and egg. Mix well.
  5. In a pan heat ghee and olive oil.
  6. While the pan is heating, divide potato mixture in 6. Form into pancake shapes.
  7. Cook the pancakes on medium high heat. Once the first side is golden brown flip, and cook the other side until golden brown. Don’t crowd the pan.
