Oh, oatmeal raisin muffins how I have missed you! You see, I don’t own any muffin tins. But I was back in Canada for two weeks, which meant I was taking full advantage of my parent’s pimped kitchen which is the inspiration behind this oatmeal raisin muffins recipe.

I have a tiny kitchen, whereas my mom works as a chef for Miele, so hers is bad @$$. She also has every gadget a gal could dream of including muffin tins!

Darn are oatmeal raisin muffins delicious! They are so good that I am going to find space in my kitchen to store muffin tins because I will be baking more of these easy oatmeal raisin muffins very soon!

Oat Raisin muffins make a great travel snack

Back in Canada, I made a batch of these oat raisin muffins at the start of our trip and one batch at the end for my grandma (she loved them). I wanted to pack some for our adventures in Iceland (read about my first trip to Iceland). These oatmeal raisin muffins are perfect for traveling and as safe plane food.

This oatmeal raisin muffin recipe is based on a raisin bran muffin recipe I originally got off the back of a bran bag (I think it was Quaker- the bag was yellow). When I went to the store to buy bran I couldn’t find the type I usually use and all the other brands were not allergy friendly— may contain sesame. This meant time to experiment! What we had at home were rolled oats and a Vitamix. When you give the oats a quick pulse and break them down to the point between full oat and oat flour, you get the perfect bran replacement!

Using rolled oats in the muffins gives them a sweeter and lighter taste than the with bran. I made one more modification to the original recipe: switching vegetable oil for coconut oil. I am obsessed with the fruitiness it adds to baked goods.

Ingredients

  • 1 1/2 cup Rolled oats
  • 1 1/4 cup Buttermilk
  • 1/3 cup Coconut Oil – in liquid form: you can heat it in the microwave for 20 seconds and give it a stir.
  • 1 egg
  • 2/3 cup Brown Sugar (lightly packed)
  • 1 cup Whole Wheat Flour
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/2 cup Raisins

  • Muffin cups

Instructions

  1. Preheat oven to 375°
  2. Using a food processor, Vitamix, or other blender, pulse the oats until they have broken down into small pieces: the point between full oat and oat flour. This doesn’t take long. (Make sure not to turn the oats into flour.)
  3. Mix oats and buttermilk in a large bowl. Let sit for 5 minutes. In the meantime line your muffin tins; this recipe makes 12 standard muffins.
  4. In a separate bowl whisk together coconut oil and egg. Add to the oat mixture and mix well.
  5. Add brown sugar to the mixture, mix well.
  6. Mix in the flour, baking soda, baking powder, and salt.
  7. Add in raisins. Mix well.
  8. Fill the muffin tins; you want the batter to be in line with the top of the tray.
  9. Bake 15-18 minutes, until golden brown.

Notes

  • Add 1 1/2 teaspoon cinnamon and 1 teaspoon vanilla with the brown sugar for extra flavor
  • Use a light olive oil, avocado oil or vegetable oil as an alternative to coconut oil
