Apple Maple Cake

This apple maple cake is a Canadianised version of the classic German apple cake. In fact, this is an adaptation of my mother-in-law’s apple cake recipe. It’s one of her staple cakes, she makes it so often, she was able to tell me the ingredients and the measurements of the top of her head.

You may have heard me rave about my favourite adopted German tradition of afternoon coffee and cake in many posts, such as when I wrote about Lemon Yogurt Cake or my spin on this recipe with the Spiced Pear Cake. So you’ve probably heard about how my mother-in-law is the queen of the cake! This German apple cake and her plum cake are ridiculously good, I will need to grab the plum cake from her next time.

What I love is that she knows both are Kortney safe and always has some ready for me when we go visit. So I too can enjoy a slice with my cup of joe… gotta love when someone goes out of the way to make sure you can participate in a food-related event.

Since it’s fall and I am all about everything apples and cinnamon (I’m not a pumpkin spice gal) it was time to share this recipe. My mother-in-law makes her cake batter with some lemon rind and sugar, but I added my Canadian twist using maple syrup and cinnamon. You can sub the maple syrup for sugar if you want, it will just be a little sweeter.

Apple Maple Cake

Apple Maple Cake is a riff off of traditional German Apple Cake that uses maple syrup making it delightfully moist, nut-free and refined sugar free.


  • 2/3 cup Butter (room temperature)
  • 3 Eggs
  • 1/2 cup & 1 tbsp Maple Syrup
  • 3 1/2 cup Flour
  • 1 tsp Baking powder
  • 3 Apples – peeled and cut into small pieces
  • 1 tsp & 1 tsp Cinnamon plus


  • 9 inch Springform pan
  • Beaters or a whisk and wooden spoon
  • Mixing bowl


  1. Preheat your oven to 350°.
  2. Butter your pan and then lightly coat with flour.
  3. Combine butter, eggs and 1/2 cup of maple syrup using either beaters or a whisk. The mixture should be foamy and a little clumpy.
  4. Add flour, baking powder and 1 tsp cinnamon. Mix well using beaters or a wooden spoon.
  5. Mix apple pieces with 1 tbsp maple syrup and 1 tsp cinnamon.
  6. Spread 2/3 of the dough into the prepared pan, place apples over dough evenly.
  7. Spread the remains 1/3 dough over apples – this is tricky and is best done using a spatula.
  8. Bake for 35-40 minutes until golden brown and toothpick comes out clean.
  9. Best served with fresh whipped cream.

  • This cake looks amazing Kourtney. I still remember the cakes of Germany – I’m not a big cake fan, but they were different and even special somehow.

    • What’s great about the German cakes is that they aren’t as sweet as your typical American cake and have a denser texture, which I love.

  • I’ve always loved apples but this year I don’t know what it is, maybe baby on board, but I cannot go a day without eating an apple. Sometimes more than one so I try to add them to salads, oatmeal, anything. I’m not even interested in pumpkin. This cake looks simply delicious and adding to my list to make soon!

  • I’ve never had an apple maple cake but I love all the ingredients and flavors used 🙂 I’ll have to give this a shot! I love any excuse to use my Springform pan haha
